Is it safe to apply patches like the Ultima IV graphics and music upgrade? Or are there extra steps I have to take to stop errors?

No it's perfectly safe and fine. I have done it plenty of times and never had anything bad happen, the worse I got was maybe the sound not playing because the settings didn't save or I picked the wrong setting.

If you want a simple method I would recommend Pix's Ultima Patcher it has all the upgrades in a easy to use interface to make applying them to the gog version easier.

Thanks for the quick answer.

And I didn't know such a thing exists (I guess because it's recent) and so I would have had to apply the patches manually, which I remember being a huge bitch. Thanks!

No problem, and yes it seems to be something new or newer I think it came out around shortly after EA started releasing the series on GOG.

A followup question. I noticed that the patcher did not have an option for the bugfix patch for UW2. Is this because the gog release is already patched with this? Or will I need to still apply the patch?

Given that GOG applies any all bug fix patches to the games, I would say yes it should be updated already.
