The thread title pretty much sums it up - I'm playing U7 from the new app that GOG seemingly recently created on a Mac. Is there any way to access the F2/F3 cheats here?

I don't know about cheats, but on Macs the F keys are usually tied to some specific functionality like lowering or increasing the screen brightness. In order to use the actual keys themselves you need to hold down the fn key (on my iMac keyboard it's right of the backspace key). Under System Preferences -> Keyboard -> "Use all F1, F2, ..." you can invert this behaviour so the keys work as normal keys and using the special functionality requires holding down fn (that's the way I have it set)

Try accessing the "dosboxULTIMA7_single.conf" file inside the the folder for whichever part your playing, and on the line where it says ultima7.com add a space and the alt character alt+255 at the end
Then hit the F2 equivalent for Mac if there is one

There is no Alt Key on the Mac Keyboard, There's a Config folder which has 3 files:
Launch.config
Preflight.config
Ultima 7.config

Anyone with a Mac know how to enable the cheat?
