Is there a way to play this game without connecting/logging into GOG? Not sure if i missed a setting somewhere...

All gog games should be playable offline. The gog galaxy client is optional. You can use it to install the game or you can download stand-alone installers from your account. After being installed you can exit or even uninstall gog galaxy. The games should still be playable.

If you installed it via Galaxy the desktop shortcut is linked to galaxy by default. In the folder you installed the game there should be a shortcut to launch the game without galaxy (just replace the one on desktop with this one if you like).
