Are there instructions on how to use the GOG version of TA on Gameranger? Downloaded GR, and it seemed to indicate that I had to buy their copy...

Gog Version works perfectly fine. Just install GoG TA and install Gameranger. GR will automatically detect TA.
What makes you think they want to sell you something? GR does not sell games...

Nah, just browse the game's .exe there. Ctrl+E if you don't know where.

On a related note, is LAN multiplayer fairly simple to get going?

I remember trying it a few years ago and it was an absolute nightmare.

I think so... but why was it a nightmare?
The machines wouldn't see each other in the local LAN lobby nor would they see any games the other created. We had to go through (IIRC) Game Ranger and even that didn't work.
