so after installing them via the GOG downloader, do i need to extract the files into The Torchlight Folder, or am i already good to go?

You can extract them wherever you want. They don't depend on the game's installation and only usable besides, not within the game (pictures, music, PDF documents)
The Level Editor is to be installed separatly. Extract the installer TorchED_1.0.68.227.exe from the Zip-file and start it.

Not that I know of. It's only released for Windows, but you can try using Wine ([url=http://en.wikipedia.org/wiki/Wine_(software)]en.wikipedia.org/wiki/Wine_(software)[/url]).
