The game only saves when you quit. This means that decisions like gambling on an item are permanent, so you must think carefully before proceeding.

This is how the Diablo games worked as well. It's a holdover from the roguelike games that inspired the ARPG genre. Of course, in most roguelikes when you die you must start the whole game again!
There isn't any. The game saves automatically when it loads a new level or when you quit to main menu. Each character has its own savegame.

There is a Hardcore option in Torchlight which turns on permadeath.

It's a tad different from Diablo. In Diablo when you quit and then started up again you started at base camp. In Torchlight you start exactly where you stopped playing the time before.
I always make a backup copy of the save game file(s) before gambling :-)

Technically, that's exactly how Diablo 1 worked... D2 is when the Diablo save system changed.
