Thought I would try the texture mod.

I placed the folder in the Mods folder.

Started up Torchlight, got a message saying did I wish to continue as save game
did not match but did I want to continue.

Chose to continue, and the graphics looked the same.

Played a bit, closed game game.

Reopened game, got the message about save game not matching, continued anyway and the graphics
all the same.

Do I need to start a new game, or do the mods not work with Mac version ?

I don't have a Mac myself, but I seem to recall that there were certain data files used on the PC version, but not used on the Mac version, that you had to delete within the mod or they would interfere with playing the mod on the Mac client.

You may want to check out the Runic forums and ask there.
