I've seen mention of an HD mode in the patch notes, but I can't find any setting that would allow me to actually switch between both HD mode and original. How do I activate the HD mode? Or is it missing in GOG?

On keyboard i don't know but on the controller it's the start button.

I'm using the keyboard. But I tested then some function keys and it is F1, which switched between both modes.
