What I mean by this is if I buy the DLC's on gog.com will I get a copy on my tablet version similar to how Star Realms does?

I don't believe you will.
I just bought the game on GOG while I also have it on Steam on the same computer. The DLC I bought and played on GOG is not available when I start the Steam version.

You don't get DLCs for your tablet when you buy the GOG version. Besides, the tablet version doesn't have all the DLCs like any PC version.
