I just don't understand why anyone didn't like the undead in Thief 1. I thought they added another dimension to the game's enemies, and they were actually quite scary to boot. I mean, I could understand if they weren't someone's favorite part of the game, but I keep seeing people pointing them out as one of the things they distinctly didn't like about T1. That makes no sense to me.

At the beginning I agree with the others that didn't like them. They detracted from the whole you are a thief, not a Tomb Raider or Van Helsing. After a mission or two I realized they created an incredible atmosphere. To this day, the enemies still bothers me much more so than modern horror games.
When I first tried playing the Cragscleft mission I just couldn't go because I was too scared of the zombies :D
Took me a while to overcome my fear. But now yeah, I do like my Thief with zombies :p

Ha! Yes, I remember the first time I started prowling around the caves under the prison...only to discover the zombies! That was one of the few times any game has actually managed to surprise and scare me.
I also enjoyed thief 1 more than thief 2, after playing thief 1 thief 2 just felt like a lot of the same thing. Sure there were some new things such as potions and the vine arrows, but overall it wasn't enough to provide a fresh new experience.
How do you sneak passed the zombies?

You don't sneak past them, you destroy them to stop their unnerving moans. :) Anyway, Thief 1 does a good job at mixing it up. Whenever you get tired of straight thieving missions in the mansions of the rich, there's a supernatural level to break the monotony. Afterwards there's another mission with humans to relax you again. In Cragscleft, when I first played this game way back, I was so happy when I finally got past the mines and into the Hammerite factory that I wanted to run up to the guards and hug them!
