I've just finished Thief 2 and moved onto DS, and noticed that among many changes, KOed guards now drop whatever they were carrying- mostly swords. And apparently I can't interact with these objects even after I've moved the unconscious body.

I know that killing people in T1 and T2 leaves a bloodstain that others can notice, so have they now implemented a similar system for non-lethal enemy removal, or is it just an odd little detail that everyone else will overlook?

I have some time I last played the Thief 3, but... I think it's the latter - they will overlook that someone just drop his weapon. At least I don't remember having problems because of it.
Recently finished two playthroughs back to back, and do not remember any enemy reacting to finding a dropped sword.

No. Enemies do not react to dropped weapons.
However I think (not sure, but I seem to remember) that it's dangerous to knock out another person if there's a sword on the ground where they'll fall, as it might stab them. Dunno if that's due to buggy physics or a behaviour the designers intended.
I don't think so. Never ever it happend to me. The only problem it could be that it makes sound, which could be noticed. :)
They also notice open doors, and will investigate. I can't remember now whether this AI behaviour was present in T2, but in T1 guards definitely ignore open doors.
