They keep suggesting I replace an Old bouncy house, but I dont know how??

My suggestion would be to remove your bouncy house (right click) and build a new one. But it's been a while since I played this game, I just bought it today, I may be wrong.

As sicdaniel said, you need to delete your old ride and build a new one it its place. It took me a while to figure out too.

What I am yet to find out, though, is for rides that malfunction and fall apart you end up with rocks on the land that stop you from building over them, but how do you remove those rocks, do they disappear over time or are they permanent?

I don't believe that there is anyway of removing those rocks. You could think of it as a punishment for letting a ride explode.

That was what I suspected, though I'd have preferred the rocks to eventually disappear after some significant time has passed.

I'd like to make an addendum to your statement. To sell your rides, you must right click the blue entrance booth. I was looking all over for any sort of sell or demolish button, and after reading your post, I was getting frustrated that right clicking the ride itself did nothing, either. Eventually I got the idea of clicking the booth and, sure enough, that worked.

[Edit: I'm not sure why I said to sell a ride. I think I read elsewhere someone saying about selling them, but I'm not so sure that's what really happens. I don't notice any money refunded when removing a ride, and the popup message actually uses the word, "delete." I'm inclined to believe that we're simply demolishing the ride when we get rid of it.]

I'm afraid you have to destroy it. And that sucks, especially when you have to replace a rollercoaster, since the whole track will get erased
You can also delete the ride by right clicking on it multiple times, like a double or triple right click on the actual ride instead of the booth. This can be useful when you have a shop placed obscuring/hiding the entrance booth on the screen.
To replace a rollercoaster for example, delete the connecting pieces to the entrance/exit area and than delete that part and replace it with a new entrance/exit part. Than connect it again with the actual track and open it up again (costs you some money though).
