I went to go update my game from 1.10 to 1.21 and forgot to backup my saves first so I terminated the process in task manager, now whenever I run the update it says I have the wrong version of the game. Any way I can force the installer to update?

There is only one clean way to proceed: uninstall the game fully and re-install.
