I am from Poland and want to change language to polish. There will probably be aviable language pack to download later.
On the day of release, there will be an optional 3GB download for language packs :)

I don't get it, why would you need to buy on Steam? The language packs will be available after the official release for every supported language, including "Deutsch". But I've seen someone claimed you'd be able to activate Steam key on GOG to get your DRM-free copy as it was with Witcher 1 and 2. I'm not sure, though.

I've read some time ago that they would probably add the option to redeem the game on GOG, but not any time soon.
It's not complicated at all. First you load the game in English. As soon as available, most likely shortly before or on the 19th, you load the language pack of your preferred language and install it. That's a smaller download, than the game containing all languages.

People say language pack is about 3 GB. It's smaller than the core game, but not small. As for how it works, Destro gave a link in this thread.
