I just finished "La Cage au fou" and by accident stumbled upon the quest "Amidst a Mill's Grist". After checking up on it I read that it was a missable sidequest that you might not get to see if you finish the next main story mission.

Now I tried doing research on the Internet about what other missable sidequests (or timed ones) lurked in the shadows, but most topics contained a lot of spoilers or did not give the information desired.

So my question would be, without naming any spoilers please, what sidequests are time sensitive in Toussaint?

Is there another one after La Cage au fou, that I have to do before the next major quest?

No side quests are time sensitive. Some have cut-off points because of storyline, but side quests are just that, side quests and, because of their nature, all are missable to one degree or another.

Wow, that did not help at all. I know that all of em are missable if I choose not to do em. I can finish the game without doing ANY sidequest at all, so I miss all of em. But I think I made myself clear what I meant.

So unless you can name the ones I need this is not helpful.
