MANY issues that are driving me insane:
1. The client show a big connect button. If I click it it asks for a code. What code is this?
2. The witcher 3 game doesn't update. It indicates in the changelog 1.04 but ingame its 1.02 - Are these two issues related? are there standalone patches?
3. To get the DLCs I have to use this gog/galaxy. does this not, by definition make it a DRM? Is there a way to access the DLC without galaxy.
If anybody has any insight, in ANY of these matters, it would be highly appreciated.

#1) No idea what you mean by that, I've never seen the client as for any code for any game ever, including Witcher 3. Post a screenshot.
#2) Make sure you have auto-updates enabled for the game and it should automatically update to the latest version of the game. If you have auto-updates disabled you'll have to update it manually by looking for an update entry on the menu or something. Alternatively download patch 1.03 and 1.04 under "Get backups and extras" and run the patch manually. My game updated using auto-updates automatically each time an update came out. I also was able to download a local backup copy of each one of the patches without any problems using Galaxy.
#3) No, you do not have to use Galaxy to download the DLC. Since your claim is false, the second part of whether it is DRM or not doesn't even come up because you can download the DLC 4 different ways.
1) Go to the website and download the DLC using your web browser. If you can't find it, look harder, it's there. :)
2) Go to the website and download the DLC using GOG Downloader. If you can't find it, look harder, it's there. :)
3) Go in Galaxy and "GET BACKUP & EXTRAS" and download it manually. If you can't find it, look harder, it's there. :)
4) Go into the More->Configure screen on Galaxy, and check the checkboxes for the DLC you want and it will immediately download and install that DLC into the installed game.
That's one, two, three, four options for your downloading/installing/backup pleasure. Absolutely zero DRM whatsoever even with the most convoluted mindset about what DRM even means.
Hopefully my insight into these matters helps you to get what you want though. Good idea to not assume the worst in situations like this, but rather to assume the best and ask questions and only if you're told the worst after to think the worst. :)
