My brother and I are currently using the same computer for our games.

He bought TW3 from Steam and I from GOG. Now we have the problem that both clients save the saved games in the same folder, namely in C: / User / Documents / The Witcher 3.

I would now like to change the location for GOG to C: / Users / Documents / BLAH / The Witcher 3.

Can someone help me?

Same game on the same computer? Can't be done. At least not by any method I know. I would normally have advised to use a 'mklink' shortcut, but the problem is you are using the same computer, so that won't work. The game saves are managed by the game, so they will look in the same location on the same computer.
In my opinion it should be possible, because the game is installed two times. Its installed one time through steam and one time through another platform GOG.

GOG is over C:/Programm (x86)/GalaxyClient/Games/TheWitcher3WildHunt and over steam its in C:/Witcher 3

Is it possible to use the mklink on the same computer for GOG and if yes how do I do it ? Which Data should I Change ?

You are completely missing the point. The saved games are managed internally by the game; hard wired. There is no option to customise save game locations, so regardless if one is Steam and one is GOG, the game will look in the same place on the same computer.

You could try using different Windows accounts, since the saves go in the "Documents" folder of the logged-in user.

Creating a simple account just for the game(s) should be sufficient, I think
