in heart of stone how do i defeat the caretaker in scenes from a marriage, he just keeps regenerating from any damage i do?

Always use Quen and try not to get hit by him, this will prevent him regenerate his health (his weapon allow him to do that).
When he summon the spirits kill them as fast as you can to, again, prevent him from regenerate health.

you could also try the ekimmara potion which will help regenerate you every time you hit him
