So I've played this game in the past via steam sharing and got a decent way through the game. Will the game installed through GOG use the original save files?

I'm not sure. However, I checked the save file location for the GOG version for Windows 8.1. The location is Your PC/Documents/The Witcher/Saves. You might want to check if that is the same as your steam file and move them if its not.

Yes it will. I have played through the game on steam and when i loaded the GOG version the saves will show up in the start menu.
