I installed The Witcher using GOG, but there's no options to change the language anywhere. I remember reading that the Enhanced Edition had the option for a few different languages, so I assumed it would be easy to figure out, but no luck yet. Am I missing something?

That's true, GOG installs all languages by default. After you switch audio / subtitles to your preferred version and want to save some HDD space, you can manually delete unwanted language files.
Okay I think I have it figured out. Not sure if I was too tired to see it or if I actually changed anything. Thanks!
Could someone post the menu options it is in? Don't have the game here atm, and want to show a friend the horrible hungarian dub, but can't navigate her to the correct option :D
