how can I change language to polish

At the main menu, click on options.
Polish is 1 click to the right of English. (See Pic)
Then Accept (bottom arrow)
Changing subtitle language, changes the whole interface text.
Or if your comfortable with editing the registry, the config settings are in Computer\HKEY_CURRENT_USER\Software\CD Projekt RED\Witcher\Settings
Change TextLanguage and VoiceLanguage from 3 to 5 for Polish. (see Pic)
