I can not find the options where you choose the language, but in store are reported 4 languages.

Inside the game folder there's a file called "language_setup.exe" which lets you switch language.
Yes! Thank you!
I don't seem to have this file. What else can I do?

I you use Galaxy, you should be able to access it via one of the sub-menus (I'm not sure what it'd be called); if you just used the standalone installer (and maybe even if you installed with Galaxy?), there should likewise be an entry for it in the "The Saboteur [GOG.com]" Start menu group.
Now, if the shortcuts are there but the file's not, I'd try using "verify/repair" with Galaxy, or just reinstalling the game -- making sure that your AV isn't drop-kicking it for some reason.

the language choice in Galaxy is greyed out, and repair ur uninstalling and reinstalling always go back to the Italian dub, that sucks.
i will try the standalone.
