It seems that one can't choose how and when to save the game. Also, I accidentally messed around with the volume and brightness controls and want to reset them to their default state. I imagine these values are stored somewhere, but I can't find the file? Let me know how I can reset these values, and also where the saved games are stored so I can reset those and start the game from scratch. Thanks.

This stuff is all inside the EGG files. You can just delete all of them and stuff will reset to defaults.

But even easier:
Set volume to max (since that's where it is when starting the game for the first time)
Set brightness to minimum, then press the plus sign three times.
