I was wondering what resources are available outside of the market place? I know about the Quarry and Mine, but specifically I was wondering about wool. As Tailor, I was curious if it was possible to get wool from sheep and if there are any other similar sources to find for other professions.

The wool only comes from the market place, sorry no sheep. Not sure what other raw materials you can get for yourself other then some of the alchemist I think, as I've not had much time to play the game. The manual you get with the game has lists of raw materials though and where you get them from, so you could check that for what you need.
Like Ralackk said, you only get wool from the marketplace (because of it being a so-called "imported good").
In addition to the Mine and Quarry, you can also get Wood from forestries. For the Alchemist and Perfumer, you can get the basic raw materials by sending your people out to harvest them (so no cart needed for them).
"Second-grade materials" (such as paper or polish) are an interesting case. You can theoretically get them from AI workshops, but the AI players never sell them, so your only choice is the marketplace.
