So, I'm a fairly casual strategy player and have never played any Guild games. If I'm only getting one, which one should it be?

Either the first one or Renaissance. Renaissance contains the content of 2 and Pirates, and the first one is different enough from the second. The first one is also buggy for a lot of people though, so be aware that you may have trouble with it.
