Why there is no Polish version of this game (but is available, in example, on Steam)? Is there any chance that GoG add polish version in the future?

No there is a contract with the physical distributor of daedalic which forbid them to give the game other then in english on GoG. If you want a drm free digital polish version buy it on Humble Bundle. https://www.humblebundle.com/store/the-dark-eye-chains-of-satinav
