I just bought the game and so far it seems to be almost identical to the original amiga version. It has been a good while since I played the game on Amiga though :p.

The only difference I noticed was in aiming: in the remake you can shoot in every direction using analog gamepad. In the original game you could only shoot in 8 direction.

The 360 degree aiming can be turned off from the option menu. Personally I prefer using traditional 8-direction aiming.

I had no sound issues on Windows 7 and Wine 1.4.
The mentioned animation issue (gates open instantly instead of fading out) is not critical for me.
If I want to play the Amiga version, I start my Amiga.

I should add that this remastered edition is based on the AGA (amiga 1200/4000) version and not the A500 version of the game.
What that means is moar colors everywhere.

EDIT: Rargh, nevermind me. You already have more info at hand. :)

Gah, I was afraid of that. I highly dislike some of the color choices in that version, especially the Gentleman's bright cyan coat and the Brigand's purple shirt.
