This game is not installing correctly with all 3 DLCs purchased, as it stops and fails at 875mb. On top of this, if you install the game with the 4 separate installers, it won't start from the Galaxy play button. Kinda shoddy for a big-name new release.

I didn't have this issue (on Windows 10 x64, 21H1 build 19043.1415).

I installed the main game (Rebirth and the three DLCs in order from the offline installers.
Each time, ie. after installing Rebirth and then after each DLC installation, I would also launch the game (from the shortcut in the folder where the game is installed) and it would start and run without issues.

The only issue(s) I had was:
- After fully installing the game and playing for a run, I exited and launched the Galaxy client. The client started updating the game, apparently downloading about 800+ MBs and installing it, but as far as I can tell, it didn't actually change anything -- so that "update" was pointless and it shouldn't have been done. But the game launches from Galaxy too for me.
- I have the issue mentioned in the other thread about the items collection pages having 7 less slots than the Steam version. (I didn't check with my Steam game, but the GOG screenshot in that thread is also how it looks for me in GOG Isaac, and on the web the full item pages are shown to have 7 more item slots. So I don't know what is up with that as of yet.
Seems to have been fixed overnight
I also had this problem, just to add info.
I also had a Windows Defender notification about a Trojan around the same time.
