Can anyone tell me what I need to do to restore saved parties / characters ?
(saved them but when I start again they are at XP 0 and with no equip again just like they were just created)

You need to return to the Adventurer's Guild and remove the party members in order to save your progress. If I remember correctly, you have to remove characters individually in Bard's Tale I. Bard's Tale II has a Remove All function, while Bard's Tale III adds in a save anywhere feature.
