I tried alt+enter during game play,
and I tried adding -w to my target location on the shortcut properties.
I want to know as well.

I try to stream these GoG games but some of them refuse to work in windowed mode so I am forced to use VMware Player to window capture the game running in the guest OS.

Even -swindow doesn't work.

The strange thing is, the game is running on my 1920x1080 monitor full screen yet when I start the stream, the game is showing as a small box in the center of the streaming window like it is streaming in the game's original resolution.

I have tried a few of those programs out there that are supposed to help give windowed mode but I have yet to find one that actually works for those games I have tried. Most that are for borderless windowed full screen require that the game be able to be put into windowed mode first.
