I'm not aware of any. It might be interesting to learn my way around the save format, but I would be unmotivated to create a user-friendly editor.

If your main goal is making peace with the game, I would say:

* Getting characters with overall high-ish stats is pretty well good enough, but initial high hitpoints, dex, and strength are your survival tools for front-liners and consitution is kind of the munchkinny stat for highest hitpoints over time.
* Back liners basically just need hitpoints, and for casters higher spell points are nice.

You can save-load to micro-optimize the stats you get when levelling up, but probably don't need to at all. If you picked your initial rolls for overall goodish rolls, you'll max your characters out before you finish the game. Even if you don't, you shouldn't need to.

If it just rubs you the wrong way to get an int gain as a warrior, well I can't suggest anything other than your save editor goal to change it.
I would also love to see a user-friendly character editor for the remasters, as I am not proficient with hex editing, but I somehow switched one of my mages to Wizard (fourth class) a bit too early, and am now stuck with 7/7/6 for my spell levels in the previous three classes, and I really don't want to back up that far, or create a new character, as either would be a loss of many, many hours of time and reloading for decent stats. Doh!

Does anyone know any easy way to fix that with a hex editor, or even Excel or Notepad? Thanks!

There is a program called "poke" that SHOULD do the trick. I have not tried it with THIS game (waiting for a great sale), but it works great with a LOT of other programs.
You could just use Cheat Engine to edit your Exp. You can also reduce your level so you can level up again to gain more stats. Both very easy to find.
