Other than achievements missing on the GOG version (as usual..) is there much difference between it and the Steam version? Does the GOG version receive all the same updates? Is crossplay a thing?

the game has ingame achievements if that makes you feel better..So far the game always received the updates and even received the 1.4 update the same time as team...Currently there is a problem with crossplay according to some people but probably it should be fixed in the upcoming days.

if you use GOG Galaxy then the achievements will unlock on it, or else in game achievements

No mods unless you go to the discord, or buy game on steam. All steam mods are now DRM and can only be downloaded through the workshop, or using STEAM CMD after loggin in on it to prove you own the game.

Looks like Steam updates before gog does.

Steam achievements don't make much difference because they are the same ones that are inside the game.
Steam achievement system of terraria currently also messes up a bit the act of resetting achievements only in-game for replay value through achievements file manipulation.
GOG version in the case of terraria gives some songs from the game for free just by buying the game, the songs of terraria on steam are more complete but they are all to buy separately.
