Was anyone successful at hiding their Rogue? I'm wearing a Light Armour, but the only option similar to Hiding appear to be Sneak, which triggers "Not while in combat" warning.

Am I doing it wrong? Manual didn't clarify anything.

You're doing it right, except that as the game says, you can't sneak in the middle of combat in D&D.
Sneaking is used only for scouting ahead and being able to steal stuff without being caught.
It depends on 2 skills, hide and move silently, by the way.

Hm, BG made me confused - IIRC, you could hide in combat there.

Even in BG your character has to be out of the vision of all enemies in order to hide. So yes, although your party could be in combat, if you want to hide a character you have to have them go out of sight first, which really means you've taken that one character out of actual combat.

I've not yet played ToEE, so not sure if it is identical. Give it a try, in a combat situation take the character out of sight of enemies and then try hiding.
