Hi there, I recently found an old copy of this game and decided to try it out, so I patched it and installed the Circle of Eight Modpack 8.1.0, which allows to increase the number of starting party members.
I really would enjoy playing the game with 8 custom characters, but I am wondering if HAVE to recruit some NPCs to proceed with the story, making the game unwinnable.
So, I am asking:
Can I play the game with a full party from the beginning or it will break the game?
Thanks in advance.

No you don't need to hire any NPC's to "beat" the game, but certain story arcs will be closed to you. For example, you will lose out on the most OP weapon in the game, because that story arc won't activate. Also, some NPC's know certain spells that can be scribed for party use long before you will find the corresponding scroll in the dungeon. Do note that there are several alternative ending scenarios that are conditional on what happens during the course of the adventure.

Question: Why are you so intent on doing it with 8 PC's? Why not 7 or even 1?

I would add this, if you didn't already know. You can only have 8 party members, period. So if you customize all 8, you can never hire an NPC. With 7 created party members, you could 1 NPC at a time. And so on.
I looked a bit into this.
I decided to start with 6 characters, not 8, to avoid any issues.
Anyway, I think you can always kill unwanted party members and dismiss them to solve party size related problems.
So what the Parrots are trying to say is that you read all the manuals on the game and after 2 hours pass in time, you get to play the game? Jeez leweez. If I got to go through that amount of time preparation just to play a game, that game isn't worth it.
