I downloaded this game using the Gog downloader, and then installed it in the regular manner. However, when I tried to run it, my anti-virus protection detected a threat in the game.exe file and removed it. I have since unistalled the game and removed the download files.

Has anyone else experienced this problem? Whether or not, I suggest that GOG take the effort to examine the Syberia files on their servers for any potential viruses and threats. It's sad that this should happen with a file downloaded from a professional company.
That's most likely a false positive from your anti-virus (what's the name of your anti-virus?). This happens with (virus-free) downloads from many professional companies because anti-virus scanners rely on heuristics to detect new viruses (which aren't in the regular database yet). Those heuristics generate more or less false positives (detected as virus even though they aren't), depending on the product you use and how aggressive their heuristics are.

Yeah, it's a false positive. I installed the game and it didn't raise any flags with the AV.
