I know that for the original versions of swat 4 and its multiplayer there is a patch to play online to this day, however does this work with the gog version? also aren't most servers for the unpatched version?

To play SWAT 4 in multiplayer, no patch is strictly necessary because you can just use the direct IP dialog to connect. Server IPs can be copied from a couple of websites, e.g. Markmods.

To get the in-game serverlist working, I think the best patch can be found from swat4stats.com. Just replace Engine.dll with the provided file.
