Hey,
I just bought the HD Version of Stronghold for Mac but there are only these two, non-HD, resolutions available. Is there any way to fix this Problem?

I guess that you have an unsupported resoluitons like me.
I have asked firefly about this problem and I would answer you: No.
Sorry to say that but the fact is HD version doesn't support all hd resolutions. For example mine 1280x800 screen don't have new resolution options.
Perhaps gog would help, as I am running collector edition.
