I got to the Dwarven level, and while talking to the main dwarf, I started tinkering around and found a scroll in the chest behind him. So anyways, the entire group of dwarves came after me and eventually I died. And of course I did have a recent save, so now I am back a couple of hours of game time.
Anyway - if I run into this again - is there anyway to undo them becoming enemies? Or once you take something, it is pretty much a done deal.

I'm not sure, because I always just reloaded a save if I made them angry, but I think it's permanent. So just keep some saves if you want to experiment with stealing their stuff.

For that particular game, the effect is permanent. Go to a back up.

However, I believe there is a way to get what is in that chest legitimately. I think there is something that you have to kill... I am just not sure what right now. It has been a while since I played this game.

There's a lich further into the Dwarven Clan Hall in a casket you need to kill. The Dwarf Elder will reward you with the contents of the chest.
