I just noticed that my GOG version of the game is 2.3.3.1, wheras the most current version actually seems to be 2.3.3., so do I have a version from the future? Nobody on the paradox forums could explain this to me and the changelog holds no information on this either.

My checksum is: Wolfe 2.3.3 (70ef)

So, this little 1 after the 2.3.3., what does it mean?
Steam has an opt-in feature for beta patches, but GOG Galaxy does not have such a feature. So instead Paradox just opts us all in, and we can rollback to the previous version to opt out.
correct, Gog is played on the Steam test server and we are beta testers by default
I tried updating from 2.3.3 to 2.3.3.1 today. The game would not run at all. A message window said the .exe was incompatible with my operating system (Windows 10 ver 1903). Rolled back to 2.3.3 to be able to run it.

my W10 (version 1709) is running it just fine

have you got a 32 bit system or mods perhaps?
