How the hell do you take screenshots in this game?

Well, you could use an external tool, or if GOG's overlay works, that could be used.
Otherwise, it depends on the operating system you're using.

Hi o/ Late reply but as I know the GOG's overlay is not usable with Startopia.
BUT, there's a simple solution if you are using Windows 10. :)
You can use the Windows's game bar using the keyboard shortcut "Win + G" by default, or directly taking your screenshots with the "Win+Alt+PrintScreen" shortcut.
After this, you just have to retrieve your screenshots inside the Xbox's application, or directly in your capture folder.
