So, on Steam, they've gotten both the 1.6.1 and (as of today) 1.6.2 patch updates with bug fixes. My Stardew version on GoG says it is still 1.6.0 and there are no updates available. Any idea if these patch updates are being brought over to GoG?

I found the version.
So it is 1.6.1 for compatibility version of Windows. I tried to update it but for the moment no update ia available.

Hoping that GOG admin actually reads this.

Is it an accident that the compatibility version is still at 1.61 and every other version is at 1.62?

GOG staff probably don't read messages in the sub-forums . From what I can see the compatability version has been updated to version COMPAT-1.6.3.24087.6494986520

GOG isnt responsible for providing patches. This is the task of the developer. And he does probably read the forums of his game :)
