How do you update the early access starbound to latest release, while keeping your saved games on the mac?

No can do. Early Access to full release is apparently the last wipe, however. So one may hope.

For windows saves were removed when updating to non beta, I think it will be the same for other OS. A lots of things have changed, even more since v1.1.
You can still keep beta version install if you whant to keep what you did and take screenshots to do it again in new version.
