In one of the missions i was piad in stocks as opposed to cash. i've realised that if i hold on to these stocks they grow in value. How long should i keep the stocks for? do they go up really high?

Yes...I always take the stocks when playing SW. They continue to go up a bit each mission, and really add to your income as the game progresses...don't sell them!
