is it possible somehow to get german audio / txt?

i´ve found some other language packs, but for different versions...

also i like to know how to put the "Roll" axis from the x-axis together with the pressed 2nd Joystick Button

to other Buttons of my Thrustmaster Warthog HOTAS...

As regards joystick button mapping: hit ESC and you'll find "joystick configuration", or something to that effect, in the menu. Then you just have to push the joy buton you wish to edit and choose and click the function to map from the list. And that's it. No need to click "save" or anything. To map another button, push it and repeat the above.
