I cannot run the game in 3D mode, it crashes at soon as it loads a level, does anyone knows a fix ?

The crashes are caused by the ddraw.dll included with the game so the first step is to get rid of it.
You will probably have to enable softwarecursor now. There are multiple ways to do that, just search the forum for "softwarecursor".
The game will no longer crash but it will fall back to software mode when you launch a mission. That's because GOG disabled 3D acceleration for some reason.
To get around that you either need to use one of these:

or patch the game with XWA Hacker + enable3d.bat. ( XWA Hacker alone might not suffice though. In this case add dgVoodoo.)
