I've seen the other threads around button mapping, etc, but haven't figured out how to make the game recognize my joysticks throttle. FWIW, I've running the Collector's CD version (so not GOG release) but thought maybe folks here would know how to handle this.

I'm not sure the DOS version could handle the throttle natively (X-Wing collector's sure does not)... you might need to resort to some 3rd party stuff for that, like the profiler software if your joystick comes with one, or even Joy2Key
With my Saitek I just made a profile that splits the throttle into 4 bands and then mapped the corresponding button for 0-33-66-Full speed on each one.... works pretty well.

The Windows version, on the other end, supports that out of the box
