Being a complete newbie when it comes to this stuff, I'm at a bit of a loss.
I've found the menu (Ctrl F1) where I can assign keys to the pad, but it loses it every time I switch the pc off. Am I missing something or do I need to do this every time I boot the game.
Any help would be appreciated.

You mean in Dosbox?

Once you save your mappings, DOSBOX should generate a .TXT file in your current dir (default name should be mapper<something>.txt)
To have it then loaded for you next sessions, you need to edit the .CONF file adding the line

mapperfile = <name of your file>
