Actually, I think this is possible through the miracle of the DOSBox mapper (Ctrl F1). Obviously, this will only work on the DOS version. You can map the Button-2 X-Axis combo to the Z-axis on your joystick. Voila! Of course, this is technically cheating, since you couldn't do that in the original game.
That'll let you roll with the rudder, but it doesn't work very well, because you can't turn left or right while using it no matter where your joystick is. Also, as mentioned above, you can't pitch up or down while rolling either
