I have seen a few threads around the internet with users asking how to play the game in High res. after a bit of work I found a usable solution to get widescreen(stretched) however you can use basically any 4:3 or 5:4 resolution you want.
This was tested on my Old laptop with a slow gfx adapter, with that said results may vary. This guide is for x64 win7 should be the same or similar for other OS's
You will need to download "Windowed Borderless gaming" by a steam user

In registery editor go to
HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\LucasArts Entertainment Company LLC\star wars starfighter\1.0\renderers
And I changed both Direct3d and OpenGL
"defaultwindowed" to 1
Open Windowed Borderless gaming
launch Starfighter at any settings.
Alt - Tab out and pull up the context menu for WindowedBorderlessGaming and select Add window.
Next click back onto the Starfighter game screen and press F3(default key)
Now starfighter should be registered with the app but could take multiple tries.
Exit starfighter and again go to the Windowedborderlessgaming context menu and goto settings>game settings make sure starfighter is selected from the dropdown if it is not there you need to retry the last steps.
Set your desired fullscreen res (usually your desktop resolution) This will take care of taking whatever the game is outputting and stretching it accross the whole display

Or the first location. It seems to vary system to system
Here you can change the defaultwidth and defaultheight to any 4:3 or 5:4 resolution(decimal). On my crappy laptop i was able to select up to 7680X8960 and the game would still work properly (but slow) this in effect is downsampling or supersampling (whatever)
Due to the videos/menus/render all working at different resolutions it will try to change its size back.
the default hotkey for WindowedBorderlessGaming is F4 to restore the scaling.
