This post was originally to inquire about screen capturing methods but I have since been able to successfully take PNG screenshots and MP4 video recordings with the Windows 10 Game DVR function:

Simply pressing the Print Screen key while running the game always turn out gray for me after being posted in MS Paint and Open Broadcaster was not able to detect the program properly (or perhaps there's a way to get this to work) but it captured the game's audio with a blank black screen.
So, for anyone using the GOG version of Star Wars: Shadows of the Empire on Windows 10, you should be able to use this method.

Alt + Win (⊞) + Print Screen for Screenshot
Alt + Win (⊞) + R for Video Recording

*Note, this was not done in Windowed mode but I'm sure it would work*

I'll add a sadly hard learned observation: if your running in comparability mode the video record doesn't work. Found that out when I got a great new graphics card and Win 10 had an 'argument' with drivers when playing Star Wars: The Old Republic. :( I really miss that video capture but setting it to compatibility is all that stopped the crashing.
If you want a excellent method for Screenshots and Screencapturing I got 2 excellent Open Source programs for you.

ShareX - its a fantastic screenshot app with various other features.

OBS aka Open Broadcasting Software - it is the best of the best, you can not even tell its recording.

You have lossy and lossless recording options as well as software or hardware encoding,

You may need to use OBS classic (Classic is windows only) if you have trouble with OBS Studio.
